This is another recipe from the Day to Day Cookery book. The cinnamon rolls are a quick & relatively easy way to get something similar to cinnamon buns which were a favourite when I was a kid. I could never get buns to taste the same as they do at home, and they take so long! We sometimes have them for breakfast on Christmas Day.

    Ingredients

    Instructions

    1. Sift flour and salt into a bowl.
    2. Rub butter into flour with finger tips. Mixture should be the consistency of dry bread crumbs.
    3. Make a hole in the centre of the mixture and pour the first ¾ c of the milk in at once.
    4. Mix until a moist dough is formed [don’t overmix]. Add the rest of the milk if needed.
    5. Knead lightly on a floured board and press out to 2.5cm thickness.
    6. Cut out with a scone cutter, place close together on greased baking tray. Brush tops with milk.
    7. Bake in very hot oven, 12-15min.
    8. To make cinnamon rolls: After kneading, use a rolling pin to roll dough into a rectangle about 1-2cm thick. Spread with butter, cover with brown sugar and sprinkle with cinnamon (and currants, if you like). Roll up, cut into slices about 2.5cm thick. Bake like ordinary scones without brushing tops with milk.
