According to the recipe book, this is a recipe that Rhoda got from Barbara Condie. Barbara had a daughter at the same special school as Amy in Mackay and we knew her from there.

Ingredients

  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 cups flour self-raising
  • salt
  • 2 cups dried fruit (dates, sultanas, raisins)
  • 1/2 cup walnuts chopped
  • 1/2 cup glace cherries
  • bit lemon zest
  • 1 tbsp (heaped) fig jam
  • 1/2 tsp vanilla

Instructions

  1. Cream butter & sugar, add eggs.
  2. Add sifted flour, then fruit, nuts and jam.
  3. Bake in 2 greased slab tins (20x30 cm) in moderate oven for 30min. Instruction Image
