Hard Sauce for Plum Pudding

Serve this sauce with your Christmas pudding.

We tried Great Grandma Priestner's plum pudding recipe for the first time this year (2012) with some success. My mother used to serve Christmas pudding with something she called hard sauce and with caramel sauce. This is a recipe for hard sauce that we used this year (it's not Mum's recipe but one I found on the Internet). I seem to remember that hers had lemon in it - keep tuned, I will check with my brother and see what he knows.

Notes

  • you can substitute 1 tsp of vanilla for the rum/brandy. This also could be where to add the lemon juice instead of vanilla or rum/brandy.
  • you can either pipe rosettes or put the sauce in small bowls, just be sure to keep it in the fridge if you live in tropical Queensland like we do.

Ingredients

  • 1/2 cup soft butter
  • 1 1/2 cups icing sugar sifted
  • 2 tbsp brandy or rum

Instructions

  1. Cream butter & icing sugar until light & fluffy.
  2. Stir in brandy or rum. Pipe into rosettes. Store in the fridge.
