Iris’s Boiled Fruitcake with Crushed Pineapple

Iris gave me this recipe because Andrew asked for some fruitcake and she said this was an easy never-fail recipe that she liked to use. So on the rare occasions that I have felt moved to make a fruitcake, this is the recipe that I have used.

Ingredients

  • 125 grams margarine
  • 1 cup sugar
  • 500 grams mixed fruit
  • 1 tsp mixed spice
  • 1 tsp baking soda
  • 1 400g tins crushed pineapple drained
  • 1/2 cup drained pineapple juice
  • 1 cup flour self-raising
  • 1 cup flour plain
  • 2 eggs

Instructions

  1. Combine the first 7 ingredients listed in a saucepan and bring to the boil.
  2. Boil for 3min. Cool completely.
  3. Stir the flour & beaten eggs into the fruit mixture.
  4. Pour into a greased, lined cake tin, & bake in a moderate oven for 1¾ - 2hours.
