Spicy Apricot Spare Ribs

pork spareribs                 This is a recipe I got from a good friend when we both lived in Moranbah. I'm not sure where she got it from. It's the same friend who gave me the recipe for Nan's jam drops.

Ingredients

  • 1 kg Pork spareribs
  • 425g can Apricot nectar
  • 1/2 Cup vinegar
  • 2 Teaspoons Cornflour
  • 2 Teaspoons Soy sauce
  • 2 Teaspoons Crushed garlic (The bottled stuff is perfect)
  • 1 Teaspoon Grated ginger (I use the bottled stuff)

Instructions

  1. Place ribs in a pan, cover with water, add vinegar and bring to the boil. Boil uncovered for 15 minutes. Drain and rinse under cold water. Place ribs in a shallow baking dish.
  2. Blend corn flour with soy sauce, garlic, apricot nectar and ginger.
  3. Pour over spareribs and bake uncovered in a moderate oven for 1 hour.
  4. Add a little hot water if sauce evaporates too much.
  5. I like this dish served with good old mashed vegies.
