This is the other recipe from Every Aussie Kid's Cook Book that I am pretty sure we made at least once. The others that we made were Kookie-burras and Witchety Grubs.

Ingredients

  • 100 grams butter softened
  • 1/4 cup honey
  • 1 cup cheddar cheese grated
  • 1/2 cup crushed nuts
  • 1 1/2 cups flour self-raising
  • 24 dried apricots
  • raisins/sultanas

Instructions

  1. Preheat the oven to 180 degrees C. Grease the baking tray or cover with sheet of baking paper.
  2. Put the butter into a mixing bowl and beat until smooth and creamy. Add honey and stir it in.
  3. Add the cheese & nuts to the mixture and stir until well-blended.
  4. Sift in all the flour then slowly stir until the mixture is one big, smooth lump.
  5. Rolls little bits of the mixture to form 24 balls about the size of a 20 cent piece. Instruction Image
  6. Cook in 2 batches. First batch: put 12 balls on the baking tray., leaving as much space between the balls as possible.
  7. Flatten the biscuits with fingertips or the palm of the hand. Instruction Image
  8. Press an apricot and 3 sultanas/raisins onto each biscuit so that they look like animal feet.
  9. Bake for 8 minutes or until light golden in colour. Take care not to burn the apricots. Cool on tray for 1 minute then move onto cooling rack. Instruction Image
  10. Repeat for the second batch of biscuits.
