Lorna’s Peanut Butter Crunch

This slice is from my Aunt Lorna – she was married to my father’s younger brother. She was the youngest of the aunts by far – there were only 3, and now, she's the only one left.

Note

  • This slice doesn't require any baking.
  • For those of you in Australia, I have made this with golden syrup instead of the corn syrup. 
  • The name for Rice Krispies in Australia is  Rice Bubbles.
  • It's up to you whether you want to use smooth or crunchy peanut butter. I guess the question is whether you want bits of nuts in your slice or not.

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 1/2 cup peanut butter
  • 2 cups corn flour
  • 1 cup rice krispies
  • 1 cup brown sugar
  • 4 tbsp butter
  • pich salt
  • 1/4 cup milk
  • 1 cup icing sugar

Instructions

  1. The first 5 ingredients make the slice and the remaining 5 ingredients make the icing.
  2. To make the slice: Mix brown sugar & corn syrup, heat and bring to a boil.
  3. Add peanut butter & blend well.
  4. Press into 20cm square pan.
  5. To make the icing: Combine brown sugar, butter & salt in a pan. Bring to a boil.
  6. Add milk, bring to the boil again and boil for 3min.
  7. Cool & add icing sugar.
  8. Beat until smooth and spread on slice in the pan.
