Chicken Chow Mein

chicken chow mein   I first cooked this recipe when I lived in Savage River on the west Coast of Tasmania soon after I was married.  A friend I met there who was a bit older than me shared this recipe with me.

Ingredients

  • 1 chicken
  • 1 tin cream of chicken soup or cream of chicken and corn soup
  • 6 cup mushrooms sliced
  • 1 cup cabbage shredded
  • 1 cup celery sliced
  • 1/2 cup peas (can use frozen)
  • 1/2 cup beans (can use frozen)
  • 1 carrot cut into match sticks
  • 1 large Onion cut into rings
  • 1 onion for steaming with chicken
  • 1 tablespoon cornflour

Instructions

  1. Steam chicken with onion in 3 cups salted water for 25 minutes. Strain and reserve stock.
  2. Cut chicken into pieces and let cool
  3. Heat enough oil to cover bottom of pan or wok then add onion, mushrooms, celery, peas, beans and carrot. Fry until onion is clear. (you could include any other vegetables here your family likes, eg- broccoli, zucchini, capsicum)
  4. Add 1 cup chicken stock, undiluted soup, cabbage, chicken pieces, salt and pepper to taste.
  5. Mix cornflour with some chicken stock and add to vegetable stir fry. Simmer 25 minutes, stirring occasionally. Add more chicken stock if necessary.
  6. Serve with rice or noodles.
