Blueberry Muffins

Not sure where this one came from - Mum, I suspect. For some reason, maybe because they were the kinds Mum usually made, I always feel that the best kinds of muffins are blueberry and bran muffins.

10-12 muffins

Ingredients

  • 1/4 cup oil
  • 1/2 cup white sugar
  • 1 egg
  • 2 cups flour plain
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 cup blueberries

Instructions

  1. Cream oil, sugar & egg.
  2. Add dry ingredients alternately with milk. Start & end with dry ingredients.
  3. Fold in blueberries.
  4. Bake at 180° C for approximately 20-25 minutes.
