A lovely moist loaf cake with banana and chocolate. It takes 4 large overripe bananas. It can be made ahead of time and frozen. lovely and overripe like this

Ingredients

  • 125 grms soft butter
  • 1 cup brown sugar
  • 1/3 cup golden syrup
  • 1 teas vanilla bean paste
  • 2 eggs
  • 2 cups mashed banana (over ripe is best)
  • 1/2 cup walnut or hazelnut chopped
  • 100 grams milk chocolate melts chopped
  • 1 3/4 cups plain flour
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 160 deg C fanforced or 140 deg normal oven
  2. grease and line loaf pan with baking paper
  3. beat butter, sugar,golden syrup, and vanilla for 10 mts or until pale and creamy.
  4. Add eggs and beat well to combine.
  5. Add bananas, nuts, choc melts, sifted plain flour, baking powder bicarb and cinnamon. Mix to combine.
  6. Spoon mixture into pan. Bake for 1 hr 10 mts until cooked when tested with a skewer.
  7. Cool in pan for 20 mts before turning out onto a wire rack to cool completely.
  8. Slice and serve with butter if desired.
