Chocolate Fudge Biscuit

This is a slice that Rhoda used to make all the time when I first met her – don’t know whether it’s still on the list of regulars. Ask her why it's a slice when its name includes the word biscuit - I have no idea, that's just what she always called it. Mine never turned out like hers, though. Eventually I gave up and left it to Rhoda to make - she has always been more than generous about sharing the results of her baking!

Notes

  • The key to this one is icing it while it’s still hot.

Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 1/2 cups mixed fruit
  • 4 tsp baking powder
  • 1 1/2 cups flour plain
  • 2 tbsp cocoa

Instructions

  1. Mix all ingredients.
  2. Pour into baking tray.
  3. Bake in moderate oven for 20min.
  4. Ice with chocolate icing while hot.
