pikelets       This is my Mother in Laws recipe. She was an excellent cook, just like my Mum.

Ingredients

  • 2 cups self raising flour
  • 3/4 cup sugar
  • 1 egg
  • 1 pinch salt
  • 1 1/2- 1 3/4 cup milk
  • 1 rounded tablespoon butter melted
  • dash vanilla

Instructions

  1. Mix dry ingredients together in a bowl
  2. Beat egg in a separate bowl and add milk. Add to dry ingredients.
  3. Beat until sugar is dissolved.
  4. Add melted butter and vanilla and mix well
  5. Let mixture stand for 5 minutes. Add more milk if mixture seems too thick.
  6. Melt butter in pan and Cook spoonfulls in frypan - about half the heat on frypan control. Wait till mixture is bubbling, then flip pikelet to cook other side.
  7. Serve with honey, syrup, jam, cream or whatever takes your fancy.
