Orange Wholemeal Biscuits

A healthy fresh orange flavoured biscuit.

Ingredients

  • 125 grms Butter softened
  • 1 rind grated (very fine)
  • 1 cup sugar
  • 1 egg
  • 1 cup shredded coconut
  • 1 2/3 - 2 cups wholmeal s/r flour
  • 2 tblespoons fresh orange juice

Instructions

  1. cream butter & sugar
  2. add orange rind
  3. Add egg and mix well.
  4. Add coconut and mix well.
  5. Fold in flour and orange juice.
  6. Roll teaspooonfulls into balls.
  7. Place on greased tray and press with fork
  8. Bake at 180°C for 15 minutes
  9. Cool on rack
  10. Store in airtight container fo rup to 2 weeks
