Chicken with Cheese

This is another recipe shared with me when I was involved with Nursing mothers in Moranbah.

Ingredients

  • 6 Chicken Breasts
  • 2 cups Water
  • 3 eschallots (can use one onion chopped
  • 3 stalks celery
  • 4 ounces grated cheese
  • 1 cup macaroni cooked el dente
  • 1/2 cup salted cashews
  • 1 can(440g) cream of chicken soup
  • 3/4 cup salted biscuits (Jatz) crushed

Instructions

  1. Place chicken breasts, water, eschallots/onion and celery in saucepan & simmer for 30 minutes.
  2. Strain and reserve stock separately from chicken, celery & onion. Break up chicken & combine with onion and celery.
  3. Place Macaroni (cooked el dente) in a greased casserole dish.
  4. Sprinkle grated cheese over pasta
  5. Cover with chicken, onion & celery.
  6. Sprinkle with cashews.
  7. Mix 3/4 cup stock with can of cream of chicken soup, then pour over nuts.
  8. Top with crushed biscuits and bake uncovered in Moderate oven for 30 minutes
