Keen's Curried Sausages

I found this relatively recently in a free recipe book of Jamie's recipes from Woolworth's. It passed the Andrew test - meaning he liked it enough to request that I make it again, so I thought I might put it up here for the rest of you. It also means that I can find it again easily the next time I want to make it.

Notes

  • I used Granny Smith apples & sultanas instead of the raisins
  • I substituted chopped flat leaf parsley for the chopped coriander because I don't like the taste of fresh coriander
  • I also used my new favourite technique for cooking this kind of dish. I put it all together, bring it to the boil, then put it in the oven instead of simmering on the top of the stove.

Ingredients

  • 3 tbsp vegetable oil
  • 3 thick beef sausages
  • 1 large onion sliced
  • 1 tbsp Keen's Curry Powder
  • 1 tbsp plain flour
  • 2 apples cored, cut into wedges
  • 2 cups chicken stock
  • 1 cup green beans sliced
  • 1/4 cup raisins
  • 2 tbsp cream
  • 1/4 cup fresh coriander chopped
  • 1 cup baby spinach
  • salt & pepper

Instructions

  1. Heat 2 tbsp of oil in a large pan over a medium heat. Add the sausages and brown all over, remove and set aside.
  2. Add the remaining oil to the pan and then the onion. Cook, stirring, until onions are softened. Stir in curry powder and flour.
  3. Slowly pour in the stock, stirring continually. When all the stock has been added whisk to ensure no lumps. Bring to the boil, stirring until thickened. Add the apple, raisins and sausages and return to the boil.
  4. Reduce heat to low (or put in the oven at 180 degrees C) for 15-20 minutes. Stir through the beans, cream, coriander and spinach, and cook for another 5-10 minutes. Season to taste with salt & pepper.
