Mince with Noodles This is a recipe I discovered when I was involved with Nursing Mothers.  Nursing Mothers produced some excellent recipe books and this is my adaptation of one of those recipes.  It's great because you can adapt it to suit the tastes of your family.  It's also good to get rid of all those odd vegies in your fridge that need using up.

Ingredients

  • 500g Beef Mince
  • 1 Packet Changs Fried Noodles
  • 1 Small Onion Finely chopped
  • 1 Packet Chicken Noodle Soup Mix Salt reduced
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Minced Garlic (The bottled stuff is great)
  • 1 300g can Corn Kernels
  • Vegies that your family likes I use carrot, cabbage, beans, peas, broccoli, zucchini

Instructions

  1. Brown the mince Add the chopped onion and garlic and cook until onion is clear Add the soy sauce and simmer for a few minutes.
  2. Chop all the vegies your family prefers and add to the mince along with the corn. Allow to simmer.
  3. Meanwhile, boil 3 cups of water in a medium saucepan. Once boiling, add the noodles and boil for three minutes. Then add the Chicken Noodle soup mix and boil for another three minutes. Add this mixture to the mince and vegetables.
  4. Simmer until vegies are cooked to your liking. My family like them el dente, so I don't simmer mine for too long.
  5. Great on toast for breakfast if you have any left overs!!
