This recipe is from my Aunt Lorna and my mother used to make them when we were kids. I used to make them for Andrew because they were one of his favourites.

Note

  • This recipe calls for light molasses which doesn't really exist in Australia. I have found that golden syrup works just fine.

Ingredients

  • 3/4 cup Butter
  • 1 cup white sugar
  • 1 egg
  • 4 tbsp light molasses
  • 2 cups flour plain
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon ground
  • 1 tsp cloves ground
  • 1 tsp ginger ground

Instructions

  1. Cream butter & sugar then beat in the egg & molasses.
  2. Add flour, baking soda, salt & spices. Mix well & then form into small balls.
  3. Roll the balls in white sugar and place on greased tray.
  4. Flatten with a fork.
  5. Leave plenty of space between the biscuits as they spread a lot when cooking.
  6. Bake at 180° C until light brown – be careful they burn easily.
