Nan's Jam Drops

jam drops                     This recipe is from the Moranbah State Pre School Family Recipe Book of 1992 when my son Ross was enrolled there.  The recipe is from a good friend of mine who used to baby sit my children when I did relief teaching.  The recipe was her Mothers Mothers recipe.  Its great because you can use the base recipe for jam drops, but you can also use it to make choc chip biscuits or any other biscuit you choose - add nuts, freckles - whatever.

Ingredients

  • 1 cup butter 250 grams
  • 3 to 3 1/2 cups self raising flour
  • 3 eggs add one at a time
  • 1 cup sugar castor if possible

Instructions

  1. Cream butter and sugar
  2. Add eggs one at a time.
  3. Mix in flour to moist but not sticky consistency
  4. Roll teaspoonfull of mixture into balls and place on to a tray lined with baking paper allowing room for mixture to spread.
  5. Dip the end of a rolling pin in flour and press into ball of biscuit dough.
  6. Fill with jam - raspberry or strawberry
  7. Bake in a moderate oven until golden.
  8. I halve the dough mixture and add choc bits or top with freckles.

I love a classic little recipe, and this one for Easy Jam Drops definitely fits the bill! Sometimes the most simple recipe can be the best, our grandparents and parents certainly never bothered with having a cupboard full of the latest and greatest ingredients to keep us feed and happy!
