This is one of my mother's recipes and an old favourite of mine (maybe because I like currants). It's nice to have with a cup of tea or coffee.


Notes

  • to sour milk - add 1 tbsp lemon juice or white vinegar to 1 cup of fresh milk 
  • you can use buttermilk instead of sour milk

Ingredients

  • 2 cups Plain flour
  • 1 cup White sugar
  • 3/4 cup Butter
  • 1 Egg
  • 1 cup Sour milk
  • 1/2 tsp Baking soda
  • 2 tsp Baking powder
  • 1 tsp Ground cloves
  • 1 tsp Ground cinnamon
  • 1 cup Currants

Instructions

  1. Combine the first 3 ingredients and set 1 cup aside for topping.
  2. To the remainder of those first 3 ingredients, add the egg, sour milk, spices, baking soda, baking powder & currants. Mix well.
  3. Pour batter into 20cm square cake pan.
  4. Sprinkle the mixture that was set aside in Step 1 over the top of the batter.
  5. Bake in a moderate oven until done (skewer stuck in the cake will come out clean).
