This is another of Mum's recipes - I love it, which is why I rarely make it. I eat it.

Notes

  • We always use walnuts for the nuts in the recipe. Keep a few to sprinkle on the top before baking this if you want it to look a little fancy.

Ingredients

  • 1 1/2 cups dates chopped
  • 1 cup nuts chopped
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 tbsp Butter
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1 1/2 cups flour plain
  • 1 tsp baking powder

Instructions

  1. Combine the first 6 ingredients in a mixing bowl.
  2. Sprinkle the baking soda over the top of the combined ingredients.
  3. Cover with the boiling water and stir well. LET COOL.
  4. Sift flour & baking powder. Blend into cooled mixture.
  5. Pour into lined & greased loaf pan and bake at 180° C for about 1 hour.
