Banana Chocolate Chip Muffins











This is a favourite of my children and they are now making this for their own children.  Well Kate is anyway. Hannah makes it for herself and Ben.  Oh forgot to say this recipe is from the Family Circle step by step Kid’s Cookbook 2. (slightly adapted!)

Bran Muffins

This is complicated – I originally had 2 recipes, one from my Grannie which used natural bran and one using Kellogg’s All-Bran cereal instead of the natural bran. Unintentionally one day, I kind of combined  parts of both recipes to make a new one and this is it. The main reason was because I preferred the taste of All-Bran to natural bran (or maybe I just got confused).


  • I use treacle instead of molasses – it’s more like the molasses that you get in Canada than Australian molasses is.
  • I always use sultanas in these.
  • These days I use the baking paper muffin cases. This is for 3 reasons: (1) they’re easier to get off the muffins; (2) your muffins look like the ones you buy in a cafe; and (3) it’s easier to fill them without spilling any on the pan thus minimising effort in washing-up.

Not sure where this one came from – Mum, I suspect. For some reason, maybe because they were the kinds Mum usually made, I always feel that the best kinds of muffins are blueberry and bran muffins.

Best Ever Muffins

When the muffin craze first began, back in the days when it was hard to find muffin pans & impossible to find paper baking cases for muffins, I decided that I wanted to try making them. I knew that my mother had started making muffins as a substitute for cake when my father was put on a low fat, low salt, low sugar diet, so I asked her for some recipes – this is one that she sent. All her muffin recipes use oil instead of butter.



  • Blueberry-Lemon Muffins: as above, & combine ¾ – 1 cup fresh or frozen [thawed & drained] blueberries and 2 tbsp sugar. Fold into batter with 1 tsp of grated lemon peel. Bake as directed
  • Banana-Nut Muffins: as above, stir 1 cup of mashed/chopped banana and ¼ cup chopped nuts into batter. Bake 25-30min.
  • Apple-Sultana Muffins: as above, add ¾ tsp salt & ½ tsp cinnamon to dry ingredients. Stir 1 cup peeled chopped apple (or apple pie filling) and ¼ cup sultanas into the batter. Fill greased muffin tins 2/3 full. Sprinkle with topping mixture (2 tbsp sugar + ½ tsp cinnamon). Bake as directed.
