Spicy Apricot Spare Ribs
This is a recipe I got from a good friend when we both lived in Moranbah. I'm not sure where she got it from. It's the same friend who gave me the recipe for Nan's jam drops.

Ingredients
- 1 kg Pork spareribs
- 425g can Apricot nectar
- 1/2 Cup vinegar
- 2 Teaspoons Cornflour
- 2 Teaspoons Soy sauce
- 2 Teaspoons Crushed garlic (The bottled stuff is perfect)
- 1 Teaspoon Grated ginger (I use the bottled stuff)
Instructions
- Place ribs in a pan, cover with water, add vinegar and bring to the boil. Boil uncovered for 15 minutes. Drain and rinse under cold water. Place ribs in a shallow baking dish.
- Blend corn flour with soy sauce, garlic, apricot nectar and ginger.
- Pour over spareribs and bake uncovered in a moderate oven for 1 hour.
- Add a little hot water if sauce evaporates too much.
- I like this dish served with good old mashed vegies.
