This recipe is from one of the other mothers who contributed to the Kewarra Cookbook in Mackay. Her daughter was at Kewarra with Amy. It’s easy because you just dump all the ingredients in a bowl & stir and the result is a nice moist chocolate cake.

Notes

  • how can you tell that a cake is cooked? (1) you can smell it, (2) if you stick a cake tester or a bamboo skewer or a toothpick into the cake, when you pull it out there is nothing stuck to it (it comes out clean). 

Kitchen Wisdom

  • To remove onion or fish odours from cooking utensils, cutting boards or hands, wipe with vinegar and rinse in soapy water.

Ingredients

  • 3 tbsp butter melted
  • 2 tbsp cocoa
  • 1 cup flour self-raising
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/2 tsp vanilla or almond essence

Instructions

  1. Preheat oven to moderate temperature and grease/line one 20cm cake tin.
  2. Melt the butter.
  3. Place all other ingredients into a large bowl and pour the melted butter over. Beat really hard for 3min.
  4. Pour into the greased 20cm cake tin.
  5. Bake in moderate oven until cooked. Be careful not to overcook and cake will remain moist and fresh for days.
  6. After baking, ice with chocolate icing, sprinkle over grated chocolate & nuts.
