Sausage and Potato Casserole

This is one of Rhoda’s originals – she made it up one day when all she had were potatoes & a few sausages and she wanted them to go a long way.

Notes

  • I would add some freshly ground pepper and a little salt to this when you put it in the casserole dish.

Ingredients

  • 4 large potatoes cooked
  • 4 thick beef sausages
  • 1 medium tomato sliced
  • 1 medium onion grated
  • cheese grated

Instructions

  1. Combine cooked potatoes and grated onion, and mash.
  2. Boil sausages in water until cooked, slice.
  3. Layer ½ the sliced sausage, then the mashed potato & then the remaining sausage in a greased casserole dish.
  4. Top with sliced tomato & grated cheese.
  5. Bake in moderate oven for 45 minutes.
