This is one of Rhoda’s originals – she made it up one day when all she had were potatoes & a few sausages and she wanted them to go a long way.
Notes
- I would add some freshly ground pepper and a little salt to this when you put it in the casserole dish.

Ingredients
- 4 large potatoes cooked
- 4 thick beef sausages
- 1 medium tomato sliced
- 1 medium onion grated
- cheese grated
Instructions
- Combine cooked potatoes and grated onion, and mash.
- Boil sausages in water until cooked, slice.
- Layer ½ the sliced sausage, then the mashed potato & then the remaining sausage in a greased casserole dish.
- Top with sliced tomato & grated cheese.
- Bake in moderate oven for 45 minutes.
