Pikelets - GG
This is my Mother in Laws recipe. She was an excellent cook, just like my Mum.

Ingredients
- 2 cups self raising flour
- 3/4 cup sugar
- 1 egg
- 1 pinch salt
- 1 1/2- 1 3/4 cup milk
- 1 rounded tablespoon butter melted
- dash vanilla
Instructions
- Mix dry ingredients together in a bowl
- Beat egg in a separate bowl and add milk. Add to dry ingredients.
- Beat until sugar is dissolved.
- Add melted butter and vanilla and mix well
- Let mixture stand for 5 minutes. Add more milk if mixture seems too thick.
- Melt butter in pan and Cook spoonfulls in frypan - about half the heat on frypan control. Wait till mixture is bubbling, then flip pikelet to cook other side.
- Serve with honey, syrup, jam, cream or whatever takes your fancy.
