A lovely filling for tartlet

  • This passion fruit filling together with plain lemon spread or curd are regularly used as a filling for tartlets or as a layer of in between filling under a meringue

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 tblespoon Butter
  • 6 large passion fruit
  • 2 tablespoons custard powder

Instructions

  1. Mix sugar, water and butter in a double boiler and bring to a boil. This takes longer than a normal saucepan. Instruction Image
  2. Add passion fruit and custard powder.
  3. Stir quickly and then continuously until it starts to thicken on the back of the wooden spoon, Instruction Image
  4. Pour or spoon into a sterilized jar. This will last in a fridge for a month or so.
