Passionfruit Custard Spread
A lovely filling for tartlet
- This passion fruit filling together with plain lemon spread or curd are regularly used as a filling for tartlets or as a layer of in between filling under a meringue

Ingredients
- 1 cup sugar
- 1 cup water
- 1 tblespoon Butter
- 6 large passion fruit
- 2 tablespoons custard powder
Instructions
- Mix sugar, water and butter in a double boiler and bring to a boil. This takes longer than a normal saucepan.
- Add passion fruit and custard powder.
- Stir quickly and then continuously until it starts to thicken on the back of the wooden spoon,
- Pour or spoon into a sterilized jar. This will last in a fridge for a month or so.
