Nan's Jam Drops

Ingredients
- 1 cup butter 250 grams
- 3 to 3 1/2 cups self raising flour
- 3 eggs add one at a time
- 1 cup sugar castor if possible
Instructions
- Cream butter and sugar
- Add eggs one at a time.
- Mix in flour to moist but not sticky consistency
- Roll teaspoonfull of mixture into balls and place on to a tray lined with baking paper allowing room for mixture to spread.
- Dip the end of a rolling pin in flour and press into ball of biscuit dough.
- Fill with jam - raspberry or strawberry
- Bake in a moderate oven until golden.
- I halve the dough mixture and add choc bits or top with freckles.

I love a classic little recipe, and this one for Easy Jam Drops definitely fits the bill! Sometimes the most simple recipe can be the best, our grandparents and parents certainly never bothered with having a cupboard full of the latest and greatest ingredients to keep us feed and happy!
