Found this casserole recipe a long time ago somewhere. It has proved to be one that has maintained its popularity in our house. I got one of those casserole dishes that can be used both in the oven & on the stove-top to make this even easier and reduce washing-up.

Ingredients
- 500 grams beef mince (ground beef)
- 1 1/2 tsp salt
- 1/2 cup green capsicum (green pepper), chopped
- 1 medium onion chopped
- 425 gram tin of diced tomatoes undrained
- 1/2 cup rice uncooked
- 1/2 cup tomato sauce (ketchup)
- 1/4 tsp oregano dried
- 1/2 tsp white sugar
- 1/2 cup water
- 3 cheese slices
Instructions
- Sprinkle meat with salt & brown for 10min.
- Add chopped green capsicum & onion and cook a further 5min.
- Add tomatoes, rice, tomato sauce, oregano, sugar and water.
- Place in casserole dish and bake in moderate oven, covered, for 1 hour.
- Remove from the oven and top with halved cheese slices, return for 10min to melt the cheese. Serve when cheese is browned.
