Iris’s Boiled Fruitcake with Crushed Pineapple

Iris gave me this recipe because Andrew asked for some fruitcake and she said this was an easy never-fail recipe that she liked to use. So on the rare occasions that I have felt moved to make a fruitcake, this is the recipe that I have used.- Author

Ingredients
- 125 grams margarine
- 1 cup sugar
- 500 grams mixed fruit
- 1 tsp mixed spice
- 1 tsp baking soda
- 1 400g tins crushed pineapple drained
- 1/2 cup drained pineapple juice
- 1 cup flour self-raising
- 1 cup flour plain
- 2 eggs
Instructions
- Combine the first 7 ingredients listed in a saucepan and bring to the boil.
- Boil for 3min. Cool completely.
- Stir the flour & beaten eggs into the fruit mixture.
- Pour into a greased, lined cake tin, & bake in a moderate oven for 1¾ - 2hours.
