Iris’s Apple-Sour Cream Slice

This is one of my favourites of the slices that Iris used to make. It’s delicious!
Notes
- I don’t know why you are not supposed to put plastic wrap near/around this slice, but Iris was adamant about it and never failed to remind me when I took some home not to wrap it in plastic wrap.

Ingredients
- 1 large tin pie apples
- 250 grams sour cream light
- 1 packet vanilla cake mix homebrand
- 1-2 tbsp icing sugar
- cinnamon
- lemon juice & icing sugar to flavour apple
- 1/2 cup margarine
- 1 cup coconut
Instructions
- Mix cake mix & margarine & coconut. Press into 25mm x 31mm tin lined with baking paper.
- Bake for 10-12min in a moderate oven. Cool.
- Combine apple, lemon juice & icing sugar. Spread over the cooled base.
- Combine sour cream & icing sugar. Spread over the apple (will be a thin layer). Sprinkle with cinnamon.
- Bake for 10-15min in moderate oven.
- Store in refrigerator.
- Do NOT cover cooked slice with plastic wrap.
