Fruit Slice
Whenever we went to a nursing mothers get together in Moranbah we would take something to contribute to either morning tea or lunch depending on the occasion. I got some great recipes from these get togethers and hopefully other mums got some great recipes from me. This is one of those recipes.

Ingredients
- 2 Cups Self raising flour
- 1 Cup Brown sugar (I use mill white)
- 125 Grams butter (Approx 4 oz)
- 1 Egg
- 1 Cup Mixed fruit
- 1 Cup Milk
- 1 Teaspoon Bicarbonate soda
Instructions
- Combine flour and sugar then rub butter through. Halve the mixture.
- Press one half of the mixture into a lamington tin. (7 x 11)
- Combine lightly beaten egg, milk, bicarbonate soda and mixed fruit to other half of flour/sugar/butter mixture and pour over base.
- Bake 30 to 40 minutes in a moderate oven.
- You can substitute whatever you like to equal the 1 cup of fruit - eg: dates, nuts, apricots etc.
- Ice with white icing when Luke warm ( icing sugar, butter and milk). Cut into approx 24 pieces.
