Corned Beef Fritters
A way to use up leftovers after a meal of boiled corned beef and vegies

Ingredients
- 2 large eggs beaten
- 1 large onion finely chopped
- 1 cup corned beef leftover or a tin of preserved finely chopped or
- 2 cups leftover vegies finely chopped or mashed
- 1 1/2 cups milk
- 1 1/4 cups self raising flour
Instructions
- Stir all of the ingredients in together adding flour a little at a time
- Cook like pikelets ie. A tablespoon at a time in a greased frypan until it bubbles on first side then turn and cook til brown on both sides.(except at a slightly lower heat, and they take longer)
- Usually served with sauces of choice.
- To make a rounded dinner they can be served with a salad which is also easy for kids to learn.
