This is another cookie recipe from the Women's Weekly Biscuits & Slices book. Used to be a popular one at our place.

Note

  • We don’t put the nuts in the mixture and we usually double the recipe.
  • Plain flour becomes self-raising when you add 1 tsp baking powder for each cup of flour. For this recipe I would add 2 tsp baking powder(4 tsp if I was doubling the recipe - see previous point)  if I were using plain flour (which I would be because I don't buy self-raising flour).
  • I have never added a beaten egg gradually in my life - just whack it in there and beat well.

Ingredients

  • 125 grams Butter
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 3/4 cups flour self-raising
  • 1/2 tsp salt
  • 125 grams chocolate chips
  • 60 grams walnut pieces optional

Instructions

  1. Cream together butter, sugar and vanilla.
  2. Add lightly beaten egg gradually, beating well after each addition.
  3. Mix in sifted flour and salt.
  4. Add chocolate chips and chopped walnuts, mix well.
  5. Shape teaspoonfuls of mixture into small balls, place on lightly greased tray, allow room for spreading.
  6. Bake in moderate oven 10-12min.
