This is another recipe that I got from Iris. It’s really yummy – what is sometimes called ‘moreish’.

  • Freezes well – Iris said that she always doubles it and freezes half.

Ingredients

  • 1/2 cup margarine
  • 1/2 cup brown sugar
  • 1 egg beaten
  • 1/2 tsp vanilla
  • 1 cup flour self-raising
  • pinch salt
  • 1 cup mixed fruit or dates or 1/2 and 1/2 whatever you like

Instructions

  1. Melt margarine & brown sugar in saucepan. Do not boil.
  2. Remove from heat & cool slightly then add the beaten egg, vanilla, sifted flour with salt & fruit.
  3. Mix well. Spread in greased slab tin & bake in moderate oven for 20min.
  4. Ice with lemon icing, top with coconut & cut into squares.
