This is another recipe that I got from Iris. It’s really yummy – what is sometimes called ‘moreish’.

Ingredients
- 1/2 cup margarine
- 1/2 cup brown sugar
- 1 egg beaten
- 1/2 tsp vanilla
- 1 cup flour self-raising
- pinch salt
- 1 cup mixed fruit or dates or 1/2 and 1/2 whatever you like
Instructions
- Melt margarine & brown sugar in saucepan. Do not boil.
- Remove from heat & cool slightly then add the beaten egg, vanilla, sifted flour with salt & fruit.
- Mix well. Spread in greased slab tin & bake in moderate oven for 20min.
- Ice with lemon icing, top with coconut & cut into squares.
