Ingredients

  • 250 gm Butter
  • 1 Egg
  • 1 cup Castor Sugar
  • 2 cups Self-RaisingFlour
  • 1 cup Milk
  • 1 cup Crystallised Ginger finely cut (hot or naked)
  • 1 1/2 tsp Ground Ginger

Instructions

  1. Rub butter into flour ground ginger & sugar until mixture is like breadcrumbs. Press half into tray that is 20cm x 28cm (7.5 x 11 inches).
  2. Beat egg into milk. Stir in crystallised ginger. Add to the second half of flour mixture. Stir. Pour over base in the tray.
  3. Bake in moderate oven (180deg) for 30-40 mins.
  4. Ice with lemon icing.
