Buderim date and ginger loaf
A delightful light date and ginger loaf which freezes well and will last up to a week in the fridge. It is great warmed slightly 20 - 30 seconds in the microwave.

- standing time 15 mts while cooling batter before adding s/r flour.

Ingredients
- 1 cup dates chopped
- 1 rounded tablespoon butter
- 1 teas baking soda chopped
- 1/2 cup ginger chopped
- 3/4 cup sugar
- 1 cup boiling water
- 1/2 cup self raising flour
- 1/2 cup lemon iceing
Instructions
- Place dates, ginger, butter and Sugar in a bowl and sprinkle soda over.
- Pour boiling water over ingredients and stir until butter melts.
- Allow to cool
- Fold in flour
- Pour mixture into a 14cm x 25cm loaf tin which has been greased and lined with baking paper.
- Bake in a moderate oven for 40- 45 mts.
