Buderim date and ginger loaf

A delightful light date and ginger loaf which freezes well and will last up to a week in the fridge. It is great warmed slightly 20 - 30 seconds in the microwave.

standing time 15 mts while cooling batter before adding s/r flour.

Ingredients

  • 1 cup dates chopped
  • 1 rounded tablespoon butter
  • 1 teas baking soda chopped
  • 1/2 cup ginger chopped
  • 3/4 cup sugar
  • 1 cup boiling water
  • 1/2 cup self raising flour
  • 1/2 cup lemon iceing

Instructions

  1. Place dates, ginger, butter and Sugar in a bowl and sprinkle soda over.
  2. Pour boiling water over ingredients and stir until butter melts.
  3. Allow to cool
  4. Fold in flour
  5. Pour mixture into a 14cm x 25cm loaf tin which has been greased and lined with baking paper.
  6. Bake in a moderate oven for 40- 45 mts.
  7. Enjoy!
