This recipe is from a cookbook called the Kid’s Cookbook, which has recipes that my kids used to use, and the brownies turn out very similar to the Chocolate Fudge Brownies. The advantage is this recipe only uses cocoa not melted chocolate. The disadvantage is that it uses a bit more butter and rather more sugar.
Notes
- I heat the mixture for an additional minute on Medium in the microwave after addition of the sugar & vanilla
- I use a whole packet of walnuts and don't chop them (see justification in Notes for Chocolate Fudge Brownies).
- these should be a little gooey in the centre.

Ingredients
- 200 grams butter
- 1/2 cup cocoa
- 2 cups brown sugar firmly packed
- 1 tsp vanilla
- 2 eggs
- 1 cup flour plain
- 1/2 cup walnuts chopped
Instructions
- Preheat oven to 180C. Grease a 20 x 20cm tin and/or line with baking paper.
- Put butter + cocoa in glass bowl. Melt butter in microwave on Medium. Stir well.
- Add sugar & vanilla. Stir really well. [see notes]
- Add flour. Stir well
- Add eggs. Beat them in really well.
- Add chopped walnuts [see notes]. Stir in.
- Spread evenly in pan. Bake for 20-25min.
- Let cool, then slice.
