This is a recipe that I copied from my mother's recipe collection. It's especially yummy sliced and spread with butter. It's also a good one to take when asked to bring something for a cake stall at school.

Note

  • sprinkle the top before baking with chopped walnuts or flaked almonds or cinnamon & sugar if you want to fancy it up.

Ingredients

  • 1/4 cup Butter
  • 3/4 cup white sugar
  • 1 1/4 cups flour plain
  • 1 tsp cream of tartar
  • 2 eggs
  • 1/4 cup hot water
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 ripe bananas mashed

Instructions

  1. Cream butter & sugar. Add some flour and the cream of tartar.
  2. Add eggs, then remaining flour, mashed bananas & baking soda dissolved in water. Beat well.
  3. Pour into greased & lined loaf tin.
  4. Bake at 180° C about 1 hour.
