This is a recipe that I copied from my mother's recipe collection. It's especially yummy sliced and spread with butter. It's also a good one to take when asked to bring something for a cake stall at school.
Note
- sprinkle the top before baking with chopped walnuts or flaked almonds or cinnamon & sugar if you want to fancy it up.

Ingredients
- 1/4 cup Butter
- 3/4 cup white sugar
- 1 1/4 cups flour plain
- 1 tsp cream of tartar
- 2 eggs
- 1/4 cup hot water
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 ripe bananas mashed
Instructions
- Cream butter & sugar. Add some flour and the cream of tartar.
- Add eggs, then remaining flour, mashed bananas & baking soda dissolved in water. Beat well.
- Pour into greased & lined loaf tin.
- Bake at 180° C about 1 hour.
