Banana & Chocolate Loaf

A lovely moist loaf cake with banana and chocolate. It takes 4 large overripe bananas. It can be made ahead of time and frozen. lovely and overripe like this

Ingredients
- 125 grms soft butter
- 1 cup brown sugar
- 1/3 cup golden syrup
- 1 teas vanilla bean paste
- 2 eggs
- 2 cups mashed banana (over ripe is best)
- 1/2 cup walnut or hazelnut chopped
- 100 grams milk chocolate melts chopped
- 1 3/4 cups plain flour
- 1 tsp baking powder
- 1 tsp bicarb soda
- 1 tsp cinnamon
Instructions
- Preheat oven to 160 deg C fanforced or 140 deg normal oven
- grease and line loaf pan with baking paper
- beat butter, sugar,golden syrup, and vanilla for 10 mts or until pale and creamy.
- Add eggs and beat well to combine.
- Add bananas, nuts, choc melts, sifted plain flour, baking powder bicarb and cinnamon. Mix to combine.
- Spoon mixture into pan. Bake for 1 hr 10 mts until cooked when tested with a skewer.
- Cool in pan for 20 mts before turning out onto a wire rack to cool completely.
- Slice and serve with butter if desired.
