Banana Chocolate Chip Muffins
This is a favourite of my children and they are now making this for their own children. Well Kate is anyway. Hannah makes it for herself and Ben. Oh forgot to say this recipe is from the Family Circle step by step Kid's Cookbook 2. (slightly adapted!)

Ingredients
- 1 Ripe banana mashed (You can add a bit more)
- 1 1/2 Cups Self raising flour ( can substitute 1/2 cup wholemeal flour if you want to be healthy)
- 2/3 Cup Sugar (Any sort - I use mill white)
- 1/2 Packet Choc bits As many as you like. I like heaps!
- 1 Egg Lightly beaten
- 2/3 Cup Milk
- 1/4 Cup Cooking oil
Instructions
- Heat oven to 180 degrees. Spray a muffin tin with cooking spray.
- Mix flour, sugar and Choc bits together.
- Combine egg, milk and oil and mix into dry ingredients until just combined.
- Add mashed banana to mixture and stir gently until mixed through.
- Spoon the mixture evenly into muffin tin. Should make 12 muffins, but might be a bit less.
- Bake for about 20 minutes, but check after 15.
- Turn onto cooling rack once cooked.
