This slice recipe is from my father’s older sister. I remember her as the matriarch his side of the family. She was a hairdresser who used to do hair in her home and used to cut my hair when we visited every summer. I still hear her telling me the right way to hold my head when I’m at the hairdresser’s today! She was really good with her hands – when she couldn’t afford to buy Royal Doulton ‘ladies’ (which she loved), she did ceramics classes and learned to make them herself. She ended up teaching ceramics from her home. I still have a couple of ceramic pieces that she gave me.

- Although Aunty Floss called it a cake - I would be more inclined to think of this as a slice recipe.
- This is how to change Special K which is marketed these days to diet-conscious women, into a sweet treat with which to cheat.

Ingredients
- 1 cup flour plain
- 1/2 cup butter
- 2 tbsp icing sugar
- 2 cups brown sugar scant
- 1 cup walnuts chopped
- 2 tbsp flour plain
- pinch baking powder
- pinch salt
- 2 eggs beaten
- 1 cup Special K crushed in the hand
- 1/2 tsp vanilla
Instructions
- The first 3 ingredients are the base. The remaining 8 ingredients make the topping.
- For the base: Combine ingredients & press into greased 20cm square pan.
- Bake at 180 C for 10min. Remove from the oven.
- For the topping: Combine topping ingredients and spread on base.
- Bake at 180 C for 20-30 minutes.
