This is based on what my mother used to do, with modifications over time. I added stuffing to make the meatloaf go further and because the kids liked it.
There isn't really a recipe here, just a series of links to other recipes on the site that come together to make the meatloaf.
Start by mixing up the mince using the
Hamburger recipe. Then make the stuffing using
Rhoda's Stuffing recipe. Put half the mince mixture in the bottom of a loaf pan. Add the stuffing, then cover it with the remaining mince mixture. Spread some of
Gram's Barbeque Sauce over the top. Bake in a moderate oven (about 180ºC) for 45 minutes to an hour. Serve hot with vegetables or salad. Use sliced cold meat loaf on sandwiches with a nice chutney.
